Arrowroot is a vegetable traditionally cultivated by communities in the Brazilian Northeast and Southeast. The plant roots are used to manufacture flour or starch, which may be used to make cakes and cookies. In addition to nutritional content, arrowroot flour does not contain gluten. Ora-pro-nobis is used in Minas Gerais, usually in casseroles or sautéed. The vegetable is rich in proteins, nutrients rarely found in plant sources. Yams or carás, as they are named in Brazil middle-south, are rich sources of carbohydrates and have a depurative action on blood. The common ground between such vegetables include coarseness, high nutritional content and the fact that they have been disappearing from Brazilian production fields. They are named nonconventional vegetables, or traditional vegetables, as they are out of the supply chain and are generally kept by traditional communities. Less...
